These are my absolute favorite muffins ever! Full of texture and flavor, they are healthy and perfect for breakfast or anytime of the day when you need a quick and nutritious snack. While the preparation is slightly more time consuming than the typical muffin, they are most definitely worth it.
The mixed spices create the most divine smell and the grated vegetables and apples, nuts, whole wheat flour and Greek yogurt make for a moist yet fluffy muffin that surprisingly isn’t too dense. These are an absolute staple in our house, even my toddler requests these! Enjoy!
