Vermicelli noodle bowls are one of our favourite meals. Light, yet fulfilling and super tasty, these bowls are a well-balanced dinner or lunch idea. Pickling the carrot (and daikon or radish, if desired) adds a delicious flavour dimension to the dish and I promise, it’s a really easy step!
