Vegan Patatas Bravas

Patatas Bravas, the Spanish dish my husband ordered at almost every single place we went to on our vacation to Spain. Spicy sauce over fried potatoes.

Each restaurant had their own unique version, usually a combo of spicy tomato sauce mayo blend - some more tomatoey, some more creamy mayo-like.

Nate's absolute fave was one that has a hint of curry and a perfect balance of tomato to creamy mayo ratio (he even went back to the same restaurant to have it twice!).

It's so simple: fried potatoes + sauce, but seriously so dang delish!

We paired this (untraditionally) with a giant green salad to balance out the heavy carb load.
