Minestrone Soup

Soup is one of my favorite foods to eat. Soups generally tend to be healthy and also filling – the perfect lunch food. This minestrone soup is easy to make, healthy and comforting all at the same time. It’s the perfect soup for a rainy day.

It is definitely a bonus if you have a mason jar of homemade canned tomatoes as they add extra flavor, but a can of diced tomatoes will be fine if not. Furthermore, if you don’t have a can of mixed beans on hand, chickpeas or kidney beans will also do the trick. You can add whatever pasta you have in the house, and since you only need 3/4 of a cup, it is a great way to use up any leftover half used boxes of pasta in the back of the cupboard.

This recipe makes enough for lunch or dinner the day of for my family and then a mason jar or two extra. I love making a big pot of soup at the beginning of the week so that I have easy and healthy quick lunch options throughout the week.
