Lentil + Rice (or Quinoa)
I came up with this easy recipe for a great way to get more plant-based protein into the day. Typically, stuffed peppers have meat and dairy in them, so I wanted to come up with a great plant-based alternative.
These are super healthy, fulfilling and delicious! Gluten-free & vegan - a great, healthy option for anyone!
