Carrot Banana Muffins

These are my go-to muffins lately! Oil-free, dairy-free, refined sugar-free, these are great for a quick breakfast in the morning. I love topping mine with some freshly made walnut butter, but almond butter is great too.

I find this recipe forgiving, as I’ve swapped out the oats and coconut for leftover almond milk pulp before. If you have leftover nut milk pulp, try swapping out the oats or coconut (as long as measurements stay the same). Use your favourite nuts or favourite dried fruit, customize according to what you like!
