These vegan won ton fillings are the bomb! My husband says he doesn’t even notice the won tons aren’t filled with meat while enjoying his soup! They are a little time consuming to make but so worth it!
1 tbsp olive oil
175g extra firm tofu (or half of a regular size block), drained & excess liquid squeezed out
1 sm carrot, grated
1/4 cup broccoli, finely chopped
1/4 cup fresh spinach or cabbage
1 garlic clove, minced
1 tsp fresh ginger, minced
1/4 green onions, chopped
1 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp sesame oil
1 tsp rice wine vinegar
1. Heat oil in non-stick pan on medium heat and crumble tofu into pan. Sauté for 2-3 minutes.
2. Add carrot, broccoli, spinach, garlic, ginger and green onions and sauté for about 5 minutes.
3. Add in soy sauce, hoisin, sesame oil and rice wine vinegar and sauté for 1 minute, incorporating all the flavors.
4. Let mixture cool slightly and fill individual won ton wrappers.
