This super easy mason jar ramen is a great recipe to use for food prepping at the beginning of the week. Makes for a warming and nourishing lunch while at work!
MASON JAR RAMEN
INGREDIENTS (per jar):
- 2 tsp vegetable bouillon
- 1 tsp miso paste
- Grated carrot
- Shredded purple cabbage
- Chopped green onion
- Fresh spinach
- 1 rice ramen cake (I use lotus foods, comes in packages of 4 rice ramen cakes, https://shop.lotusfoods.com/Rice-Ramen/c/LotusFoods@Ramen )
- Add vegetable bouillon and miso paste to bottom of mason jar. Add handful of grated carrot, handful shredded purple cabbage, sprinkle in green onions and large handful of fresh spinach. Add 1 rice ramen cake. Seal with lid.
- Store in fridge until ready to use. When ready to consume, add 2 cups boiling water and shake well with lid on. Let sit for 5 minutes. Open lid and loosen up noodles with a fork. Place lid back on and let sit for 3 more minutes. Add soy sauce or tamari and sriracha if desired.
