This sandwich is a perfect plant-based alternative to a traditional tuna sandwich! Healthy fats from avocado and protein from the chickpeas, make this a nutritious sandwich you can feel good about eating! This recipe is also super easy and can be made in under 5 minutes.
- 1 can chickpeas
- 1 avocado
- 2 green onions, chopped
- 1 large pickle, chopped*
- 1 tbsp lemon juice
- 1 tbsp vegan mayo
- Salt & pepper to taste
- Rinse and drain chickpeas. Pour into bowl and mash with a potato masher. Add scooped out avocado and mash
- Mix in green onions, pickle, lemon juice, vegan mayo and season with salt and pepper
- Add a thick layer between your favorite bread. I find alfalfa sprouts to be a delicious addition!
*I used my mom’s homemade beet infused dill pickles if you are wondering what that beautiful pink hue is from in some of the photos 🙂
